BEEF CALDERETA RECIPE

Beef Kaldereta is a Filipino food recipe  commonly served during holiday season. It traditionally uses goat meat as the primary ingredient but beef, chicken or pork are can be used too. 

Now let me tell you how to prepare this delicious meal.


Ingredients
  • ½ cup vinegar
  • 1 cup tomato sauce
  • 6 whole peppercorns crushed
  • 4 cloves garlic crushed
  • 1 small carrot ,peeled and diced
  • 4 tablespoons vegetable oil
  • 1 onion sliced
  • 1 ½ lbs stewing beef cut into 1 inch cubes
  • 1 bay leaf
  • 2 teaspoons sea salt
  • 1 teaspoon sugar
  • 2 cups water ,or more as needed
  • 1 red bell pepper ,chopped into strips
  • 1 potato ,peeled and diced
  • 1 teaspoon Tabasco sauce or your favorite hot sauce
  • ¼ cup liver spread
  • ½ cup frozen peas



Instructions
  1. Heat the cooking oil in the cooking pot or pressure cooker.
  2. Sauté the onion and garlic.
  3. Put the beef. Cook for 5 minutes or until the color turns light brown.
  4. Add the dried bay leaves and crushed pepper. Stir.
  5. Add the liver spread. Mix.
  6. Pour-in the tomato sauce and beef broth.
  7. Cook the beef until it becomes tender (about 30 mins if using a pressure cooker, or 1 to 2 hours if using an ordinary pot).
  8. Add potato and carrots. Cook for 8 to 10 minutes.
  9. Put the green olives and bell peppers in the cooking pot. Stir and continue to cook for 5 minutes more.
  10. Add salt and pepper to taste
  11. Serve Hot. Enjoy!
